Long side or short side

At 103cm this is the table to pick if you are cooking for a group and want everything staged before the first pizza goes in. The 75cm short side is the better choice where width is limited. Many owners run one of each on opposite sides of the oven.

Why it matters more than it sounds

Wood-fired cooking moves fast. A pizza is done in a couple of minutes, and having nowhere to set the peel down turns a relaxed evening into a scramble. Work surface next to the oven is the accessory most Infinity owners add first.
