WPPO Red Rock 100 Terracotta Wood-Fired Oven for Bread and Pizza

The Red Rock 100, also sold as the PRO 100, is a terracotta oven built with bread in mind. It holds seven loaves or five pizzas at once, which puts it in range for a small bakery, a restaurant, or a household that bakes seriously rather than occasionally. It arrives on a wheeled stand with a lower shelf sized for firewood.

Why terracotta suits bread

Terracotta is the traditional material for bread ovens, and the reason is thermal mass. Fired clay takes time to come up to temperature and then gives that heat back slowly and evenly rather than spiking and dropping. For pizza that matters less, since the cook is over in two minutes. For bread, where the bake runs long and the oven is coasting on stored heat, it is the whole game.

Built for bread, not just pizza

Most wood-fired ovens are designed around pizza: very high heat, a short cook, and a deck sized for one or two rounds. Bread asks for the opposite — a large deck and heat that holds and falls slowly after the fire dies back. The Red Rock is sized and shaped for that second job, which is why it takes seven loaves rather than one or two.

The damper matters more than it looks

The handle on the flue controls airflow through the chamber. Open, the fire draws hard and the oven runs hot for pizza. Closed down, the oven holds heat instead of losing it up the chimney, which is what you want for a long bake. On an oven sold for bread, that control is the difference between one bake and three off the same fire.

Check the space before ordering

At 217 cm overall it stands taller than most people, and the 111 cm body needs clearance on all sides. The stand rolls, so it can be repositioned once in place, but confirm the path from the delivery point to where it will live — gates, steps, and door widths are the usual problem on an oven this size.

No build required

A traditional bread oven of this capacity means masonry, a footing, and days of work. This one arrives assembled on its stand and is ready in about twenty minutes. That is the practical reason to consider it over a built oven, particularly where a permanent structure is not an option.
